The slow crushing of the olives takes place at room temperature in the modern company mill, with stone mills that do not alter the organoleptic characteristics of the oil.
The oil produced is deposited in special stainless steel tank so that, naturally, the clarity is ripe and the typical characteristics of this product are maintained until the bottling.
